Today I have to do a blog about the cooking at the home task we had to choose a recipe and then you had to make it at home. This is the recipe out of the Edmonds Cook Book.
Banana Muffins
50g butter softened
1/2 cup brown sugar
1 egg
3/4 cup wholemeal flour
3/4 cup plain flour
1 tsp baking powder
pinch salt
1/2 tsp baking soda
3/4 cup milk
Cream butter and sugar in a bowl. Beat in egg. Sift flour, baking powder, and salt together. Dissolve soda in the milk. Add sifted ingredients alternately with soda to the creamed mixture, mixing just to combine. Spoon mixture into greased muffin tins. Bake at 200C for 12 to 15 minutes. Add mashed banana after sifted ingredients.
I didn't use wholemeal flour so I just put in extra self-raising flour. Because I used self-raising flour I didn't need to use baking powder. I also added some grated chocolate to the mixture.The muffins when cooked were soft and tasted good. The whole family enjoyed them.
Hi Cody. Well done! I am impressed with your taking a recipe and modifying it to suit what ingredients you had available. Your muffins look really nice - good colour and evenly risen. Good to see you adding grated chocolate rather than chips. One thing missing in the recipe - how many bananas did you use? Great effort, Cody.
